Phyllis Peoples Olafsen, 81, of Center Sandwich, passed away after a brief illness on August 30, 2010.

She was born January 28, 1929 in Wilmington, Delaware, the daughter of Ernest J. and Martha Wilson Peoples.  After graduating from P. S. duPont High School in Wilmington, Phyllis attended Green Mountain College in Poultney, Vermont and received her associate’s degree in 1949.  She then trained at Thomas Jefferson Hospital in Philadelphia to obtain her certification as a medical laboratory technician.

Phyllis married Arthur Henry Olafsen on May 27, 1950, and together they raised four children.  Phyllis had many interests and talents, including making pottery in her own kilns, quilting, painting, writing poetry, horseback riding, gardening, skiing, renovating old homes, traveling, and transcribing historical documents.  Before moving to New Hampshire, Phyllis ran her own retail business, The Post and Lantern, where she sold her pottery, as well as paintings and crafts of other artists, and antiques.  After her husband died in 1990, she created Overlook Farm Bed & Breakfast in East Sandwich and operated this business for 13 years.  Phyllis’s love of business continued while she worked as the office manager and bookkeeper for her son’s business, Olafsen Building & Remodeling, Inc., from 1987 until shortly before her death.

Survivors include her children, Kurt E. Olafsen, and his wife Sue, of Portland, Maine; Debra O. Hillman, and her husband Richard, of Mechanicsburg, Pennsylvania; Steven A. Olafsen, and his wife Tracey, of Sandwich; and Susan O. Lackey, and her husband Perry, of Winside, Nebraska.  Phyllis is also survived by her sister, Jean Peoples Milano of Duncannon, Pennsylvania, 12 grandchildren, and one great-grandchild.
